What’s inside – Substance over style

It’s what’s inside that counts. I am so excited to see that baking has become so popular.  Scroll through your Instagram.  I bet you follow at least one baker.  In my feed, I am overwhelmed by pictures of pretty desserts.  Intricate piping, torched meringue, 3D sugar work, and gold leaf top every confection.  Oh my…

How-To: Pickles Eh! Sunshine Date Bars

I love having a treat with my afternoon cuppa.  The sticky sweetness of dates pairs beautifully with Pickles Eh! Three Fruit Marmalade for this coffee shop confection.  The ingredients in this bar make it practically a breakfast food so there’s no guilt if you find yourself reaching for a second…or a third…. I included a…

How to – Plum Cake

Plums are my favourite fruit to cook with. I buy them almost any time I see them in the store. I love them so much that this past August I canned some in case I couldn’t find any in February. They are tart and jammy with a really beautiful colour. I have made so many different types of plum cakes (and muffins, and loaves, and crumbles, and pies) that I decided it was time to develop a plum cake recipe of my own. This cake is quick and easy to make. You can have it in the oven within 30 minutes and none of the ingredients are going to break the bank. This cake is delicious after a meal, with an afternoon cup of tea, for breakfast, or for a late night snack. In fact, I’m hard pressed to think of a time of day when you couldn’t eat this cake. I’m eating it right now.

That would be bad. So, for an everyday, healthy, on-the-go breakfast, a smoothie is the best choice. For years I brought smoothies…

The Battle of the Birthday Cake

In my life I have made a lot of cakes.  A heck of a lot of cakes If you ask me to choose between pie and cake, I choose pie every time.  Every single time. For my birthday my mom would make me a lattice top cherry pie.  As a result there was only ever…

How To – Gluten-Free Potato Doughnuts (Gem Bits)

This recipe is from Wendy Turnbull’s book “Gems of Gluten Free Baking.” These were the first doughnuts I ever made. You can make little ‘Timbits’ or ‘Doughnut Holes’, or you can use a doughnut dropper and make full size doughnuts. Really tender and yummy.

Bûche de Noël

My Bûche de Noël – Adventures in holiday baking

One day my brother came home from school with an assignment.  My mother had to make a Yule Log.  There was some class party and all the mothers had to make something.  My mother had never made one before.  I don’t remember her making it.  I don’t even remember seeing it.  What I do remember…

How To – Lemon Lime Marmalade Shortbread

I recently developed a recipe for a Lemon Lime Clementine Marmalade Cake using Pickles Eh! Lemon Lime Marmalade.  As a result,  I tasted a lot of Pickles Eh! Lemon Lime Marmalade.  Every time I put the spoon in my mouth I couldn’t help but think how awesome it would be with shortbread.  When I made the…
