Not everyone likes a beef burger. These days there are so many wonderful variations on the burger - salmon, turkey, veggie, black bean... One of my favourites is tuna. And while you could make this burger with high end sushi grade tuna, I decided to try it with a simple can of flaky tuna in water. Pickles Eh! Ripe Cucumber Relish is wonderfully vibrant and and it packs a lot of flavour into this seemingly humble burger. While you could certainly slide this patty in a bun, I recommend a slice of toasted French or Italian bread and your favourite greens. You could even pop some cheddar on top and broil this baby up for an elegant tuna melt. Ready in just minutes, this is a recipe you're going to love.

  1. Drain and rinse the tuna. Put tuna into a medium sized bowl
  2. Add relish, 2 tbsp bread crumbs, parsley, salt, and pepper. Add the egg and stir together.
  3. Meanwhile, heat oil over med-high heat in a non-stick pan. You want the pan fairly hot so as to get a nice sear on the burger.
  4. Form 2 patties with the tuna mixture. Flatten the middle on both sides with your thumbs so that the burgers are an even thickness all over.
  5. Put the remaining breadcrumbs in a small bowl. Coat the patties with the breadcrumbs.
  6. When your pan is hot, fry the burgers, turning once, for about 3 min per side.
  7. Serve as traditional burgers, or as open faced sandwiches with veggies.
